From Eat, drink and be vegan- with some minor alterations.
Turned out amazing, but dangerous: I ate half of them by myself...
I was craving something sweet today so I decided to make these. It took no time at all, I had everything at home and they are delicious.
Here's the recipe with my changes in brackets:
1/3 cup of unrefined sugar
1/3 cup of dark chocolate chunks (I used vegan chocolate chips)
1/4 tsp sea salt
1 1/4 tsp cinnamon
1/2 freshly grated nutmeg (well I had nutmeg powder)
1/16 ground allspice (I don't have a 1/16 tsp measure, so i just threw in a couple dashes)
1-2 pinches of ground cloves (I left these out bc I didn't have any, and actually I'm not a huge clove fan)
1 cup barley flour (I used spelt, it says you can also use all purpose just take away 2tbsp)
3 tbsp cocoa powder
1 tsp baking powder
1/2 scant tsp of aluminum free baking soda
1/3 cup of maple syrup
1/4 cup + 1tsp organic canola oil (first cold-pressed)
Preheat oven to 180C (350F).
Combine all dry ingredients (sift in flour, cocoa, baking powder and baking soda). In separate bowl combine maple syrup and oil (it gets kind of thick).
Then combine both together until well combined (don't overmix).
This is what mine looked like:
Scoop rounded tablespoons of batter onto baking sheet, bake for 11 mins (not longer or they'll dry!).
Out of the oven, let cool for 1 minute and then transfer to cooling rack.
