Orange Cranberry Muffins!

It seems that everyone I know has been talking about cupcakes/muffins for the past several days and they got me all hungry for some. So today, for breakfast, I adapted these from a recipe in Mollie Katzen's: Sunlight Cafe to make them completely vegan because they sounded amazing. Now that I have tried them I want to go back and try her Black bean and salsa corn muffins as well...

Orange-cranberry Corn muffins

1 cup wheat flour
1 cup cornmeal (the finer the better)
½ tsp salt
½ tbsp baking powder
1/8 tsp baking soda
¼-½ cup sugar
1 tbsp orange zest
½ cup soymilk
½ cup orange juice
3 tbsp oil
½ tbsp Ener-G (or your choice of egg replacer = 1 egg)
½ tsp vanilla bean paste
1 cup dried cranberries (or your choice of small dried fruit)

Preheat the oven to 400 degrees F. In a medium bowl mix the flour, cornmeal, salt, baking powder, baking soda, sugar, and orange zest. In another bowl mix the soymilk, orange juice, oil, egg replacer, and vanilla bean paste.

Stir liquid into the dry mix and fold until almost combined. Add the dried fruit and give the whole thing a few more stirs to get all the dry stuff moistened. Spoon into a muffin pan filling each tray about 2/3 full (on a regular size muffin pan). Bake 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the muffins cool for 5-10 minutes after baking and serve.
