Spelt Rolls with a Stew of Mushrooms, Onion and Fennel Seeds.

I think this is the second time this month I've seen a recipes in the Sunday paper, tried it and felt like I had to share it! I didn't take a picture unfortunately. This was really delicious though. I'll post the basic recipe as required but really, if you follow the link to this, quite incidentally, vegan recipe it'd probably be more informative.

I've taken quite a shine to stuffing good bread rolls with various stews and casseroles recently. I thought it was a personal peculiarity, but it would seem not :) Really enjoyed the bread-making on a Sunday afternoon too. It seems like a wintery dish but eating it in the evening sunshine was still lovely.

Spelt Rolls

300g wholemeal spelt flour
200g strong white bread flour
1 heaped tsp fine sea salt
7g packet of instant dried yeast or 15g fresh yeast
350ml water

Mushrooms Stew (This more than served the two of us)

1 handful dried mushrooms (optional)
1 tsp fennel seeds
2 garlic cloves (I used 3)
1 tsp crumbled dried chillies
2 large onions
3 tbsp olive oil
a long strip of orange zest
450g small, mixed mushrooms
1 glass white wine or white vermouth (I used dry wine, the thought of using vermouth makes me shudder)
1 handful roughly chopped flat-leaf parsley
