Hummusy Stir-fry

My beloved came up with an experimental dish yesterday that turned out quite well.

Here goes:
1/2 head of red cabbage, chopped
1 carrot, very thinly sliced
1/4 broccoli cut into florets
1/4 cup frozen peas
tofu, cubed
balsamic vinegar
brown sugar
handful of cashews
home-made (thick) hummus leftover from the night before
cross-sections of raw red capsicum which look like flowers. Nawww

Heat some oil in a pan. Add tofu and cook til slightly golden. Chuck in cabbage, and shortly thereafter, the carrot, broccoli and peas. And... probably the cashews in here somewhere too. Also whack in vinegar and sugar. Stirry mcstir-stir

Dump in bowls. Whack in a large dollop of hummus on top (hummus shouldn't be cold). Garnish with lovely red capsicum 'flowers' and hand to your partner who is reading a horrific tale in bad_service. Enjoy!

When eating, stir in the dollop of hummus to your liking.

It would probably go well with some sort of noodle or rice, but he couldn't be bothered with that last night, so it was kind of like a warm salad, or like the cabbage was acting as the rice... Was surprisingly tasty for so little work.
