Substitute For Coconut

I want to make the lentil-raisin cookies I found posted here. One of the ingredients is one cup of dried coconut and I loathe coconut with every ounce of my being. What can I use as a substitute? Can I leave it out or do I have to use something to substitute its mass?

2 cups spelt flour
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp ground ginger
1 cup cane sugar
1/2 cup earth balance
1 starchy-type egg replacer
1/4 cup applesauce
1/4 cup non-dairy milk
2 tsp vanilla extract
1 cup rolled oats
1 cup dried currants
1 cup dried unsweetened coconut
2 cups water
2/3 cups green or brown lentils

ETA - they cookies turned out to be wonderful. I didn't think about it until today as I was eating them, but I think shredded carrots would be a nice substitute for the coconut. It would work well with the spices in the recipe.

But now I have another issue. I tried using ground flax seed as an egg substitute but it looked so freaky that I didn't trust it and used an actual egg instead. So I have a question. When you grind the flax seed and add water is it substitute to be slimy on top with debris settled in the bottom? Do I use the slimy stuff in the recipe or do I use the slimy stuff and the debris?
