So, thanks to owlsie's comment on this post, I have fallen absolutely in love with I have made three different recipes from this website in twenty four hours, including:

Chopped Vegetable Salad with Garlic Dressing

Apple Crumble with Golden Raisins
(using vegan SmartBalance instead of butter, of course).


Roasted Spiced Carrots

Seriously, though, you should check out the website. You make a list of everything that you have in your fridge / cabinets / pantry, and it shows you what recipes you can make from that food. You can even make a list of exclusions, so that it doesn't show recipes that include something like milk, or even all meat, or something like that. It also gives you a suggested shopping list, so you can buy ingredients that allow you to make a bunch more recipes that they have in their database. I've been spending WAY too much on groceries this past month, and I now realize that I don't need to grocery shop for another month, basically.

Chopped Vegetable Salad with Garlic Dressing

Yield: 6 servings (serving size: about 1 cup)

* 2 cups English cucumber, chopped
* 1 cup chopped red bell pepper
* 1 cup chopped yellow bell pepper
* 1 cup chopped plum tomato
* 1/2 cup chopped green onions
* 1 tablespoon fresh lemon juice
* 1 teaspoon olive oil
* 1/2 teaspoon salt
* 1/4 teaspoon Dijon mustard
* 1/8 teaspoon freshly ground black pepper
* 2 garlic cloves, minced
* 6 red leaf lettuce leaves (optional)


Combine first 5 ingredients in a large bowl. Combine lemon juice and next 5 ingredients (lemon juice through garlic) in a small bowl; stir well with a whisk. Pour dressing over vegetables; toss gently to coat. Serve salad on lettuce leaves, if desired.


Apple Crumble with Golden Raisins

Yield: 2 servings

* 2 tablespoons all-purpose flour
* 2 tablespoons granulated sugar, divided
* 1 tablespoon brown sugar
* 1 tablespoon chilled butter, cut into small pieces
* 1 1/2 cups diced peeled Granny Smith apple
* 1 tablespoon golden raisins
* 2 tablespoons fresh orange juice
* 1/2 teaspoon fresh lemon juice
* 1/8 teaspoon ground cinnamon
* Cooking spray


Preheat oven to 375°.

Combine flour, 1 tablespoon granulated sugar, and brown sugar in a medium bowl. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal.

Combine 1 tablespoon granulated sugar, apple, and next 4 ingredients (apple through cinnamon), tossing well. Divide apple mixture evenly between 2 (6-ounce) ramekins coated with cooking spray. Sprinkle evenly with flour mixture. Bake at 375° for 30 minutes or until golden brown.


Roasted Spiced Carrots

Serves 8 Hands-On Time: 10m Total Time: 45m

* 2 tablespoons olive oil
* 2 large garlic cloves, minced
* 1 tablespoon sugar
* 1 teaspoon ground cumin
* 1/2 teaspoon kosher salt
* 1/2 teaspoon ground cinnamon
* 2 pounds carrots, cut diagonally into 1-inch pieces, or baby carrots
* 1/4 cup white raisins
* 1/4 cup chopped fresh parsley or cilantro
* juice of 1 lemon


1. Heat oven to 400º F.
2. Combine the oil, garlic, sugar, cumin, salt, cinnamon, and carrots in a shallow baking pan. Roast 20 minutes or until fork-tender.
3. Remove from oven and add the raisins, lemon juice, and parsley. Toss well. (Can be made up to 1 day ahead. Cover and refrigerate.)
