Veganise this carrot cake

Hello all!

I'd like to make this lovely carrot cake my ex-boss used to make and would look and smell divine.

2 glasses of grated carrots
3 spoons of honey (I'm thinking of replacing this either with maple syrup or molasses)
2 whole whipped eggs (see, I'm not sure what the role of the eggs here is - leavening or glue, or maybe fluffer, so I don't know what to use)
1 cup of brown sugar
1/2 cup canola oil
2 cups whole flower
1 teaspoon crushed ginger
pinch of nutmeg
1 teaspoon cinnamon
1 tablespoon baking powder
1/2 cup chopped walnuts
glazing with honey is recommended (I'd like to to glaze at all unless there's a sugar-less glaze possibility?)

bake in oven turned to 180c for 40-50 minutes

I don't want to make a cake out of it, just cookies, but I remember from seeing the cake that it looked very moist and the ex-boss kept bragging about how rich and delicious her daughters in law found it blah blah blah.

BTW, I don't live around commercial egg replacements, so please no product brands.
