saute 2 cloves of garlic and half and onion in olive oil until soft
add a diced carrot and diced celery stick and cook for a further five minutes
add a pinch of chilli flakes, salt and pepper.
add half a tin of tomatoes and 100ml of either white wine or vegetable stock
Finally throw in some Puy lentils and a couple of sprigs of rosemary (I used dried instead)
Cover and simmer for 30 minutes. In the mean time, grill the veggie sausages.
This served two, could easily be doubled. Same cooking times and everything.
