I also plan on making roasted brussels sprouts, some type of non-mashed potatoes, and some type of greens - which brings me to my questions.
Luckily, the Veganomicon has some interesting recipes that sound like they'd fit the bill nicely. Unfortunately, I have bad luck with just picking recipes out of books on the fly and having them turn out tasty, so I'm hoping some of ya'll who have tried these recipes can gimme some reviews and let me know if I'm on the right track or not. The recipes are:
Cornmeal Masala Roasted Brussels Sprouts
Lemony Roasted Potatoes
Sauteed Spinach & Tomatoes.
