Here was the recipe that I made up to test it on and it came out pretty well if I can say so myself. The recipe itself is pretty versitle. Feel free to substitute as you wish as it seems pretty to hard to mess up:
Baked Curried Quinoa
1 cup red quinoa
1 chopped onion
1-2 cups of raw veggies (I used frozen chopped spinach and cauliflower)
2 cups of liquid (I used 1 cup of light coconut milk, water, and earth balance)
2 tbs of curry paste (I used red. It's pretty spicy, so adjust accordingly if you wish)
Mix liquid and curry paste together until the paste is blended with the liquid. Place all the other ingredients in an oven save dish. Add liquid and mix well. Cover and place in 350 degree oven for about an hour. Feel free to stir half way through.
