Bara Brith (Welsh Fruited Tea Loaf)

This is a fat free fruited tea loaf, best served sliced and spread with margarine. I really liked it. It's made without yeast so it stays a bit sticky in the middle. You could have it for breakfast, a snack, or a dessert, preferably with a large cuppa!

450g/1lb dried mixed fruit, I used a mixture of currents and sultanas, but you could used chopped peel, cherries, dates, figs and so on
250g/9oz brown sugar (I used dark brown, light brown would make it a bit lighter and sweeter if you'd prefer)
300ml/½ pint warm black tea, I used English breakfast tea
2 tsp mixed spice
450g/1lb self-raising flour
The equivalent of 1 egg. I used No-Egg.

In a large bowl soak the fruit and sugar in strained tea and leave overnight.
Next day preheat the oven to 170C/325F/Gas 3. Line a 900g/2lb loaf tin with baking parchment.
Mix the remaining ingredients into the fruit mixture and beat well.
Pour the mixture into the loaf tin and bake the oven and bake for 1½ hours or until a skewer inserted into the middle comes out clean.
