I was reading through my friends page today and someone was looking for a mock apple pie recipe. I remember making one in High School with Ritz crackers and it was strange and tasted like apple pie. So I was looking to see how exactly you made it and someone posted a link to a website with mock apple, pecan and pumpkin pie recipes. Pecan pie is my favorite and I love trying weird sounding things so I was pretty excited to try this recipe out, however it calls for 4 eggs that I am not sure what to replace them with, or if there is anything to replace them with that will work in this application. I might just be out of luck....Any ideas?
Ingredients: Pastry for a 9-inch pie 1 cup cooked pinto beans, rinsed 1 cup light brown sugar 1 cup white sugar 1/3 cup margarine 4 eggs, well beaten 2 teaspoons vanilla
* (1) Puree beans in blender until smooth, or mash the beans really well. * (2) Mix beans and other ingredients well. * (3) Pour into an unbaked pie crust. * (4) Bake at 375 degrees until center is set.
