Finally it's time to share my all-time favorite meatless dish with you. Carnivores usually eat this as a side , but I enjoy eating this as a main course, much like others would enjoy a hearty, yet lightweight stew. Oddly I found this is an "American" cookbook from Germany and so I had to do some converting. Here goes....
Succotash (Serves 4):
2 tbsp canola oil
2 medium onions, chopped
1 medium bell pepper, diced
2 average-sized potatoes, diced
1 cup (250 ml) water
1 12 fl oz (350 ml) can kidney beans, drained
1 28 fl oz (800 ml) can diced tomatoes
1 tbsp sugar
1 13 fl oz (400 ml) can sweet corn, drained
salt and pepper to taste
In a medium-sized saucepan, heat the oil and saute the bell pepper and onions until onions become translucent and the pepper lightens in color.
Add the potatoes and water, simmer for 15 minutes.
Add kidney beans and let everything simmer for another 15 minutes.
Stir in tomatoes, sugar and corn. Heat through and season with salt and pepper.
That's all. A real pantry-staple no-brainer. Hope you'll love it as much as I do. =)
