Vegan camping food

My boyfriend & I are going hiking in north Sweden for two weeks, preferably as far away from civilisation as possible. We trying to travel light & won't be taking a gas cooker or anything with us, so we're currently trying to figure out what food we can take (we're both vegan). I'm assuming that it won't be impossible to scope out a shop somewhere if we need one, but I'd rather go without!

So I was planning on baking a couple of lentil loaves beforehand & freezing them - obviously they'll un-freeze during the journey but they should be edible for 3-4 days, maybe more. Along with bread, peanut butter, dried fruit, nuts, what would you guys recommend we take with us? I'm really keen for any suggestions of stuff we can pre-bake & take along with us! Many thanks!
