Making Vegan Kamaboko

Okay, I found out how I'm going to make my food look and feel like kamaboko (with agar agar)  - but what should I do for the taste? I plan on using this for my kyaraben so I do want this to be very flavorful while still retaining it's pink color. Does anyone have any suggestions?
