I need some help with either quick meals, or meals I can make ahead and freeze. I am having ACL surgery thursday and will be immobile for a few days, and then on crutches for a couple of weeks. I'd like to spend tomorrow making meals that are easy to freeze, or easy to prep ahead of time or just plain easy to make.
Besides being vegan, the meals cannot have tree nuts or peanuts in them either, or avocado. Kid tested and approved would be a bonus, my kids love polenta and quinoa and are pretty capable eaters. Recipes or links would be greatly appreciated! I have a crockpot, a rice cooker, and a semi-capable in the kitchen husband who can help.
