Vegan cornbread recipe?

I am under contractual obligation to make my family's Christmas casserole this year, as with every year (recipe below).  Before this I would just use Jiffy Cornbread mix, which made a great, tender, moist cornbread.  Unfortunately, the vegan cornbread I've tried is a bit on the dry and crumbly side.  Does anyone have a good, moist cornbread recipe (without corn kernels in it)?

Uncle Sterling's Christmas Casserole

20 vegan link sausage (Boca is my fave)
1 can whole berry cranberry sauce (or make your own)
I recipe for cornbread, enough for an 8" x 8" glass pan

Heat the sausages up and then arrange them on the bottom of an 8x8 glass pan.  Cover with cranberry sauce.  Cover this with the cornbread batter, making sure to spread the batter to all edges.

Bake the casserole at the recommended temperature for the cornbread, but bake it 15-20 minutes longer.  If you have an oven that runs hot, you might need to lower the temp by 25F degrees or so.  Make sure the middle of the casserole is done before removing from the oven.

Serve with warm maple syrup.

I know it sounds weird, but it's really delish.  I promise.
