Nanner Bread!

A very easy banana bread recipe adapted from "How It All Vegan". Where I am it is hard to find good bananas that last more than two days, so I had three over-ripe bananas that I didn't want to throw out. I went digging in my cookbooks, and found this little gem.

Very mild differentiation from the original recipe...you can substitute any appropriate oil for canola oil and sweetener for agave, and their recipe called for wheat germ, which I had to use flax seed in place of.



3 ripe or over-ripe bananas
1 tbsp lemon juice
1/2 cup canola oil
1/2 cup agave nectar
3/4 cup chopped dates, optional
1 1/2 cups flour
1/2 cup milled flax seed
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda

Preheat oven to 375 degrees F. In a medium-sized bowl, mash the bananas until very mushy. Add the lemon juice, canola oil, agave, and dates if desired, and stir. In a separate large bowl stir together flour, flax seed, salt, baking powder, and baking soda. Add the banana mixture to the flour mixture and stir gently until "just mixed"; do not overstir. Pour into a lightly oiled loaf pan and bake between 45 and 60 minutes (my oven needed ~50 minutes); test with a knife to see if bread is fully done. Let cool and serve.

I think it tastes amazing with Smart Balance butter; the agave and bananas made it sweet, and the saltiness of Smart Balance provides a really tasty contrast :3
