Curried Chickpeas

I'm in the mood for curry and cumin lately....Had some leftover soaked chickpeas yesterday, so decided to make them curried, and it was pretty good! Very quick and easy recipe, takes me maximum 20min.

Ingredients:
  • 1/2 yellow onion chopped
  • 1 large clove garlic chopped
  • 1 celery stick (I just used whatever celery I had left)
  • 1 carrot sliced coarsely
  • 4-5 tbsp fresh parsley, chopped
  • 1 average tomato, chopped 
  • 1 tbsp fresh basil
  • 1/2 head broccoli separated into pieces
  • 1 tbsp cumin seeds
  • 1 tbsp ground cumin
  • 1 tsp yellow curry powder
  • 1/3 cup grapeseed oil or cold pressed olive oil
  • salt to taste
  • 1/2 tsp red pepper flakes
  • 2 cups cooked chickpeas*

Preparation:

Pour oil into a large skillet, add onion, garlic, carrot, tomato, celery, as well as cumin seeds, ground cumin and curry, mix everything well and sauté until the onion turns golden.

After that add chopped parsley, salt, red pepper flakes, basil, broccoli, salt, mix everything well and simmer under lid for about 5min.

Then mix in cooked chickpeas. Done!

You can serve this on lettuce leaves or mixed greens, and garnish with some tomatoes/cucumbers/peppers etc. I also like to add cilantro on top, can be chopped or just add couple leaves. 

* I usually soak chickpeas overnight (about 8-12hrs), and then boil them for 1hr. Try them after 1hr, and see if they're tender or need more boiling.
