In a large skillet pour the oil and lightly saute onion and garlic, then add tomato. When onion is turning golden, add broccoli, italian seasoning, salt, pepper, sunflower seeds and mint*. Mix everything well, cover with lid, bring heat to maximum, then turn off the stove and let stay for 5-10min. This way the broccoli will be cooked but still crisp. Serve on top of mashed potatoes with some cucumbers and definitely some avocados.
*If you want, you can sprinkle the ingredients in skillet with cooking soy sauce at this point, this will add some sweetness.
