Raw Nanaimo Bars

A great alternative to traditional nanaimo bars - takes about 1/2 hour to make, and another couple hours to thicken in the freezer. Quick and easy!

Ingredients:
  
  Base layer:
  • 1 cup soaked cashews
  • 1/2 cup almonds
  • 1/2 unsweetened coconut (shredded)
  • 2-3 large dates, pitted
  • 3 dessert spoons raw cacao powder
  • 1-2 tbsp water

  Middle cream layer:
  • 1-2 inch vanilla bean
  • 2 large dates, pitted
  • 1 cup almond butter
  • 1/2 cup cashew butter
  • about 2 tbsp coconut butter
  • 1/2 cup water, or more if needed
  Top chocolate layer:
  • 1 tbsp cacao powder
  • 1 inch vanilla bean
  • 2 large dates, pitted
  • 1 dessert spoon coconut butter
  • water as needed

Preparation:

In a food processor with S blade, place cashews and almonds and chop them well. Then mix in dates, cacao powder, coconut and keep mixing. Once the mixture is uniform, add enough water to have everything stick together. Put the mix into a pie form, pressing it to form a layer.

Then in the same food processor mix all ingredients for the cream layer. Add water enough to get a uniform beige mass. Pour the cream over the base layer, and spread to cover the base layer completely.

To make the top layer mix cacao, vanilla, dates, coconut butter and a bit of water together. Mix very well to get a uniform mass. Once ready, pour it over the cream layer and spread it with spoon to fill in all the gaps.

Then cover the container with lid, and put it into freezer for couple hours to solidify. Even if you added a bit too much water to either of the layers, it will just give an ice-creamy feel to the bars.

Once ready, garnish your bars with some raspberries and blueberries, or any other fruits. Voilà!
