- ¼ organic firm tofu, sliced
- ½ cup cherry tomatoes, sliced in half
- 1/3 cup blueberries
- 1 tsp cooking soy sauce
- 2 tbsp olive oil
- 1 tsp italian seasoning
- Salt, black pepper to taste
- 1/3 cup mixed greens
- 4-5 leaves fresh basil, chopped
- 1 tsp rice vinegar
In a large skillet pour olive oil, and place slices of tofu, bring to high heat, and then reduce to medium. While tofu is cooking, slice tomatoes and add them to the skillet. Add all other ingredients, mix well and then keep searing it all for about 5 minutes more, turning tofu from time to time. Basil and greens should be added last.
