I've been lurking for a while but this is my first actual contribution. Made this for dinner last night and it was delicious. Very easy to make and flavourful without being too spicy.
I served it over wholegrain rice and it was a big hit with my husband and kidlet (who is my real barometer of what's a success)
Makes 4 servings
1 cup red lentils
1 large onion, chopped
1 tablespoon oil for frying
3-4 cups water
1-2 plum tomatoes, chopped
2 tablespoon mild curry paste
1 tsp garam masala
1 cinnamon stick
1/2 tsp salt
Carefully sift through the dry lentils and remove any tiny rocks.
In a large pot, sauté onion with oil and curry paste until softened.
Add rinsed lentils, water, tomato, garam masala, cinnamon stick and salt.
Bring to a boil then simmer covered at a low boil for up to an hour until the lentils become creamy.
Serve as a soup or over brown basmati rice.
