Easy Spicy Peanut Noodles That You Can Make In About Ten Minutes

All measurements are approximations.

2 T chunky peanut butter
2 T soy sauce
1/2 t ground ginger
spicer of your choice (I like chili paste or sweet Chinese hot sauce)

buckwheat noodles
1/3 c frozen peas
some fried tofu, cut into chunks

Start cooking buckwheat noodles, attend to them throughout the rest of the doings. Put first
four ingredients in a skillet over low/medium heat -- hot enough for the peanut butter to
melt a bit, but not hot enough to fry it. We use hydrogen bombarded Peter Pan, if you use
the good stuff, you may need to add oil or something. Mix well. If you want you can add
something sweet, like brown sugar or sweet soy sauce or sweet hot sauce. If you use sweet
soy, cut down on the amount of regular soy you use. Add peas and tofu. When they're hot,
remove from heat, drain the noodles and add them to the skillet. Mix well to coat the
noodles. If you want you can add a little water to make the sauce thinner. Serve immediately
OR SOONER. Sometimes I make this without tofu, because sometimes I just don't want it that
way. It's adaptable.
