Edamame Salad

I made this without a recipe, so I'll do my best to remember the quantities of the ingredients. It's really fresh and clean tasting, and you can easily adjust the ingredients according to your own taste buds!



1 bag frozen shelled edamame beans, thawed
3 cups cooked quinoa or couscous
1 red bell pepper, diced
1 cucumber, seeded and diced
4 green onions (more or less to taste), diced
4 tablespoons (to taste) rice vinegar
4 tablespoons (to taste) sesame seeds
Salt and pepper to taste

Mix all ingredients. Season to taste. Eat! It's yummy over a bed of lettuce.
