Shawna's minestrone

My friend, Shawna, gave me this recipe. Not sure of its original source. But it's tasty. It makes a fairly large batch.

2 medium zucchini (quartered and sliced)
1 cup baby carrots (chopped)
1 medium onion (chopped)
28oz. Italian stewed tomatoes (cut into smaller pieces)
2 cups torn kale
1 can cannelloni beans (drained and rinsed)
1/2 cup orzo pasta (cooked = 1 cup)
4 cups vegetable broth or 2 15oz cans
2 teaspoons vegetable oil

Saute carrots, onion and zucchini in 2 teaspoons vegetable oil for 5 minutes or until onions are transparent. Add kale and cook until wilted (about 2 minutes). Add tomatoes, beans, and veggie broth and simmer for 20 minutes. Add cooked orzo.
