1 package frozen organic spinach, thawed and drained
3-4 cloves garlic, minced
A little red onion, minced
Handful or two of chopped scallions
1 can vegetarian organic black refried beans
1 chili pepper, minced
Lots of lime juice
Whole-grain tortillas (I used spelt)
Optional: vegan chedder/jack/nacho cheese
Saute bell pepper, two cloves of garlic, onion, sea salt and black pepper to taste.
When nearly done, add the spinach and saute a few more minutes.
Remove from frying pan.
Saute scallions, one or two remaining clove of garlic (to taste), and minced chili pepper.
Add in refried black beans, with cumin, salt and black pepper to taste.
Add in the spinach mixture, and combine well.
Add enough lime juice to give it some tang. This is really essential!
Assemble quesadillas with tortillas, spinach-bean filling, salsa, and cheese (if desired).
Roast on a frying pan misted with oil, until lightly browned/crisped on both sides.
