2 cups dry black beans
1 cup chopped onion
1 cup choppe celery
1 cup chopped carrot
1 medium bell pepper, chopped
2 (or more to taste) jalepeno peppers, chopped
4 gloves garlic, minced
1 1/2 tsp. cumin
1 1/2 tsp. coriander
1 tsp. dried thyme
1 tsp. (or more to taste) salt
1/2 tsp. (or more to taste) black pepper
2 bay leaves
2 14 oz. cans vegetable broth (3 1/2 cups)
2 T. margarine
2 T. flour
4 cups hot cooked rice
1)Soak beans overnight in covered saucepan.
2)Drain beans and add them to slow cooker along with everything except the margarine, flour and rice.
3)Cook on low heat for 10-11 hours.
4)Turn heat up to high and add paste made from softened margarine and flour to crockpot.
5)Cook 30 minutes longer and serve over hot rice.
