Artichoke and Spinach Baskets





Ingredients:
24 Wonton Wrappers
1 garlic clove
1 onion
1 bag spinach
1 14 oz. can artichoke hearts, diced
1/8 c. soy parm
1/4 c. soy sour cream
Bullion Granules, 2 tsp.

1) Coat mini muffin pan with Pam, press wrappers in, spray with Pam again. Bake 350o for 7 minutes
2) Brown garlic, onion, bullion approx. 5 minutes, then add everything but sour cream and cook until spinach wilts and it dries up a little ~10 minutes.
3) Let cool slightly, then mix in soy sour cream.
4) Put approx. Tbsp. of filling into each wonton basket and serve.

(I ate them cooled, and they were great.)
