I cannot believe it took me so dang long to join this community. Dood! A recipe for that greenbeans/onion stuff!! I've always loved it and was sad to give it up. *happy dance*

I'm going to share a recipe of mine. I like it because it's easy and freaking cheap and fast and healthy and tasty. It's hard to find things that are all of those. For a while I was eating this once a week. BTW, it's a bastardized version of a recipe on a box of pasta.

Angel Hair and Tomato-y Goodness (if you can think of a better name, please tell me)

8 oz box of angel hair or spaghetti pasta (I prefer whole wheat)
Can of diced tomatoes, drained; or the same amount of fresh diced tomatoes (don't know the oz, size of a soup can?)
Couple green onions cut up, stalk and all (adds up to about 1/4 cup)
Couple cloves of garlic, minced as fine as you can get it
Teaspoon or so of "italian seasoning" (use fresh basil/pasta herbs if you're feelin' fancy--you'll have to use more, though)
1/4 to 1/2 cup olive oil (use good stuff if you can afford it)

Cook the pasta, toss it into the colander, put a little oil on it and leave it there. In the same (empty now) pot, put the garlic and green onions and oil. Saute it for a bit--don't brown the garlic though. Add the tomatoes and italian seasoning. Stir it good, lower the heat, put on the lid, and let it simmer for about five minutes. I don't bother to take the lid off to stir it, I just sorta pick up the pot and move it back and forth to keep stuff from sticking. Turn off the heat, put on a little salt and pepper. Add the pasta back to the pot and combine--beware, the tomato stuff will want to stay on the bottom. But at least get the oil and etc on all the pasta.

Eat. With relish.

Variations: Vegan parmesan might be nice. If you want to up the protein intake, I've been known to add about half a can of white beans, drained. A side salad is also quite nice.

Oh gods. Now I'm hungry.
