covered and smothered chimichanga

tonight I made scrumptious chimichangas...they were mexilicious...



this was my filling...but the possibilities are endless: zuccini, broccoli, onions, tomatoes, black beans, jalapenos. Place filling in center of tortilla and deep fry or or oven fry.  I topped with enchilada sauce, better than sourcream, and salsa.
