My partner made a pot pie tonight and the gravy was a combination of cashews, water from cooking the vegetables, onion, and garlic, all whizzed in the blender. It was utterly fantastic, rich gravy. Seriously not low fat, but much better for you than margarine and it tasted just as rich. The pie had fresh peas, diced potatoes, sliced carrots, and sliced celery. Very tasty. Pot pie is one of my favorite winter comfort foods.
