Cranberry-Orange Muffin Scones.

To All of the Wonderful People that gave me cranberry suggestions a few days ago (and most especially to pristinedreams who suggested I do something with scones), this is what I made:

A Recipe for Cranberry-Orange Muffin Scones brought to you by Diane Durbeck*

Guest Starring: My Variations


2 cups whole wheat flour
1 cup whole wheat pastry flour
1.25 cups brown sugar
1.5 tsp baking powder
.5 tsp baking soda

1 cup orange juice
(at least) 1 Tbsp orange zest
1 EnerG Egg Replacer
4 Tbsp applesauce
2 Tbsp water

(at least) 12 oz. fresh cranberries (I didn't chop them; you could, if you were so inclined)


1. Preheat oven to 350 degrees Fahrenheit
2. Mix the dry ingredients in one bowl
2b. Mix the wet ingredients in a second bowl
3. Combine the wet and dry ingredients in either, but not both, bowls
4. Add cranberries
5. Pour batter into greased pans (I used 2 circular 9" pans and 1 square 8"x8" pan)
6. Cook for 20 minutes, or until golden brown
7. Cool (or not) & serve
