Pumpkin Cheesecake

Pumpkin Cheesecake:

9 Inch springform pan
Preheat oven to 350 degrees Fahrenheit


Crust:
3.5 C Crushed graham crackers (almost one whole box)
¼ C Chopped almonds
¼ C Melted margarine
2 T Molasses
Mix and press around bottom and sides of pan.

Filling:
3 12oz Packages of silken tofu, pureed
1.5 C Pumpkin puree
½ C Sugar
2 T Egg replacer powder
½ T Allspice
1 T Baking powder
1 T Cinnamon
3 T Lemon juice
3 T Molasses
Mix, pour into crust, bake 65-70 minutes.
Turn off oven, let cake sit 20 min—open oven door, let cake sit another 20 min.


(I skipped the topping)
Topping:
Mix while cake is still sitting in oven—
3 T Melted margarine
¼ C Brown sugar
½ C Chopped almonds
½ C Coconut
After cake sits in open oven, sprinkle with topping, broil 2 minutes.
