Palak Paneer

Most of the recipes I have found for Palak Paneer have said that tofu could easily be substituted for paneer (the cubes of cheese), but I was wondering if any of you had played around with this? What did you find was the most convincing way to prepare the tofu? I am thinking about cubing it and then lightly grilling the cubes in vegan margarine to give it that buttery dairy taste that paneer has.

Suggestions oh please?
