Vegetarian Burritos




filling

Oilive oil
cilantro
cumin
garlic
onion
veggie ground round
black beans
corn
red pepper
chili peppers
zuchini (optional)
carob powder
pinch of brown sugar/mollasses or stevia
salt
In a cast iron frying pan sautee onions finely chopped garlic, chilis salt and veggie ground round in oil- add cumin and chopped cilantro when it's browned add the beans and corn when these are mixed I add sweetner and carob powder in place of chocolate moulet

Home made salsa
In a blender or food processor- a bunch of cilantro well chopped, 6 or eight small tomatoes fresh chili peppers to taste, garlic to taste and red onion I also like to add fresh parsley and sometimes sweet red peppers

Tortillas
2 cups flour,
1 teaspoon salt
1/4 cup corn oil
3/4 cup hot water
you can add sundried tomatoes or jalapenos or even cheese to this
Mix flour and salt together. Cut in shortening until crumbly and then mix in the water. Roll out ping pong sized balls on a well floured surface and cook in a nonstick pan on medium heat. When tortilla starts to bubble up turn over immediatly and be ready to take it out as it only needs 20 seconds on the other side.

Shred up Soya cheese with jalapeno peppers place cheese on a tortilla shell add the filling and roll them up- bake on an oiled pan till cheese is melted.
