1 1/2 cup of flour
1/2 cuo sugar
1/2 tsp baking soda
1/2 tsp salt
1/2 cup oil
1 TSP vanilla
1 TSP maple syrup
1/4 c. tofu
add wet to dry, form a big ball (if it is too dry, add a little water)
form small balls, put on cookie sheet, flatten.
sprinkle with cinnamon and sugar.
bake for 10 minutes at 375 degrees.
Also, i was looking at the back of my roommate's box of honey grahams and saw a yummy sounding recipe for Bread Pudding. and i thought it could easily be veganized.
3 cups soy milk
1 pkg. (4-serving size) JELL-O Chocolate pudding mix
9 whole Honey Grahams (i know Murray makes some that are vegan)
1 cup vegan marshmallows (optional)
2 squares BAKER'S Semi-Sweet Baking Chocolate, chopped
PREHEAT oven to 350°F. Pour milk into large bowl. Add pudding mix. Beat with wire whisk 2 minutes.
SPREAD graham pieces in lightly greased 9-inch square baking dish. Pour pudding mixture over grahams.
BAKE 20 minutes. Sprinkle evenly with marshmallows and chocolate chunks. Bake an additional 10 minutes. Remove from oven. Let stand 10 minutes before serving.
