1 cup corn meal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/4 cup melted soy butter (Earth Balance)
1 cup soy or rice milk
Combine corn meal, flour, salt, baking powder and sugar. In a separate bowl, combine melted margerine and soy milk.
Add dry ingredients to wet. Mix only until combined (you don't want a whole lot of air in the batter). Spread batter evenly in a greased (with soy butter) 8" square pan. Preheat oven at 400 degrees. Bake for 20 minutes, check at 12 minutes.
For a butterscotch effect, top hot corn bread slice with soy butter and mayple syrup.
