Tofu spinach chickpea curry

I experimented with this recipe a few times a couple weeks ago, and here's the final version, which I made tonight:

1 tbsp cumin seeds
2 small onions, diced
1 tbsp turmeric
1 tbsp garlic powder
1 tbsp ginger powder
1 tbsp chili powder
1 1/2 chili finger peppers
half a red pepper
1 can diced tomatoes
2 cans chickpeas
about 3-4 handfuls of spinach
1 block tofu, cubed
2 tbsp oil

1. Oil a large pot and add in cumin seeds. Let them simmer until they pop. Dice up the onions and add them into the pot. Sauté until brown. Add in red pepper and finger peppers. Let those sauté for a few minutes.

2. Add in turmeric, garlic powder, ginger powder, chili powder. Stir around until properly mixed.

3. Add in can of tomatoes, stir.

4. Add in chickpeas, mix well.

5. Add in tofu and spinach. Mix well.

6. Let simmer covered for 45 mins. Serve in pitas, chipatis or between toast (bizarre but tastes very good)
