CAKE (use vegan versions)
2 eggs (i used ener-g egg replacer)
2 tsp vanilla
2 1/2 c flour
1 1/2 c sugar
4 tsp baking powder
3/4 tsp salt
1 c butter, softened (i used earth balance)
1 c milk (i used vanilla silk)
12oz semi-sweet chocolate, melted
butter & flour 3 8-in round cake pans.
preheat oven to 350.
whisk eggs with vanilla (i did this right before adding it to the rest of the ingredients) & set aside.
combine flour, sugar, baking powder & salt.
stir butter into flour mixture until well combined.
gradually add milk & beat with electric mixture for 1 minute.
beat in egg/vanilla mixture.
measure out 1 c of batter & stir with melted chocolate.
scrape remaining batter into prepared pans.
drop a large dollop of chocolate mixture into the centre of each pan.
spread using the back of a spoon & then draw a knife from the centre of pan to edge, blending batters.
zig-zag the tip of a knife through batters to integrate.
bake for 30 minutes or until golden & cakes spring back when lightly touched in the centre.
cool on rack for 10 minutes then turn out onto rack & let cool completely.
ICING (use vegan versions)
2/3 c brown sugar
1/4 c butter, melted
1/4 c milk
2 1/2 c icing sugar
1 tsp vanilla
combine brown sugar, butter & milk. then add in icing sugar & vanilla. beat it all together until it's thick enough to spread.
