What to do with "cheddar"?

After many years of not eating any form of cheese analog because it took so long to find a decent one that my tastebuds decided they wanted nothing more to do with cheese, I finally discovered Follow Your Heart Cheese. Apparently I'm not quite such a post-cheese vegan as I'd thought. I've recently enjoyed many pizzas and other things using the mozarella, so I decided to try the cheddar, which was always my favorite type of cheese.

I'm not so enamored of this. It's ok (I'm having it right now on a tofu scramble), but I'm having a hard time imagining getting through the rest of the package in the short, short time before it molds (what's up with that, anyway?). Thing is, I seem to have forgotten what I like to eat with cheddar cheese. Suggestions? I definitely will want it melted.
