Curried Spinach and Potato Soup

I made a recipe out of vegetarian times last night. It calls for spinach and potato and leek but I didn't have any of these so I used Kale, Yucca and onion...I still have no idea what yucca is (some weird root vegetable) I found a can of it at Big Lots the other day. It turned out great. I'm sure it tastes better when you actually have spinach and potato. Super quick to make.

Curried Spinach and Potato soup
1 tbs. olive oil
1 cup chopped leeks, white and light green parts (I used onion)
1 tbs. or more curry powder
2 1/2 cup broth
2 potatoes peeled and cut(I used Yucca)
1 tsp salt
4 cups packed spinach leaves (I used kale)
2 cups soymilk
Freshly ground pepper

Heat oil in large saucepan over medium heat. Add leaks or onion and 1 tbs water and cook until tender. Add curry powder, stir 30 seconds. Add stock and potatoes and salt and bring to a boil. Reduce heat to low and cook until potatoes are tender. Stir in spinach or kale and cook until wilted. Puree soup in blender or fod processor until almost smooth. Return soup to saucepan and stir in soymilk, season with salt and pepper.
