Skippy Ad Peanut Butter Fudge
1/4 c. margarine (we used willow run)
1/4 c. light corn syrup (we used gross supermarket kind but i would imagine you could use brown rice syrup or whatnot)
1 18 oz. jar of creamy peanut butter (sorry, don't know the standard measurements here...)
1 1/4 c. powdered sugar (we used organic kind)
1 tsp. vanilla extract
1. Lightly grease an 8x8 baking pan and set aside.
2. In a saucepan, melt margarine with syrup over medium heat, stirring occasionally. Add the peanut butter, continue cooking over medium heat and stir frequently, until smooth and evenly mixed together. Remove from heat.
3. Add powdered sugar and vanilla. With a wooden spoon, beat until smooth. It will be pretty thick.
4. Spread into the greased pan and refrigerate 2 hours or until firm. To serve, cut into squares.
