After a really long dry spell, I finally have pictures again! Some of them aren't that great, but whatever. I've got lunch at a Richmond, VA Thai restaurant, leftovers from an Indian restaurant, homemade vegan almond butter cookies (as opposed to the usual peanut butter), and a veggie stir-fry.
Deep-fried tofu goodness at Elephant Thai, with peanut dipping sauce.
Rama Tofu - fried tofu and steamed broccoli with a peanut sauce. There's some steamed rice in the top left corner of the picture, too.
Not the prettiest picture, but leftovers are only sometimes actually pretty. This is leftover Aloo Gobhi (spiced potatoes and cauliflower) with jasmine rice and a piece of naan (bread baked in a tandoori oven) that I added a little margarine to and nibbled on.
Average everyday stir-fry, sauteed in chili oil, sprinkled with crushed red pepper, soy sauce, and a bit of sugar.
ohhhhh my goodness, these cookies are good. They are vegan almond butter cookies! There were this many last night after I baked them, and this morning there were five left. The recipe came from The Garden of Vegan, and you can use any type of nut butter you like in them. They're super easy, with no hard-to-find ingredients like egg replacer. Fabulous!
