1 lb or so of seitan, chopped
1 dozen dried chilis (ancho, guajilla, pasilla or new mexico), softened in hot water until pliable
1/2 large onion, chopped
2-3 cloves of garlic, chopped
1 tsp cumin
salt and pepper
place chiles,cumin and about 1/2 cup chile water in blender until smooth. Sautee seitan in oil with onions and garlic. add chili sauce. Simmer for 20-30 mins. salt and pepper to taste.
