Applesauce Muffins

I found this recipe online somewhere, I kind of forget exactly where. Anyways, I'll post the recipe and then my personal experience after it.

Applesauce Muffins
5 cups unbleached flor
2 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 tbsp apple cider vinegar
4 tbsp sunflower or other light oil
2/3 cup mable syrup
1 cup soy milk, plain, or vanilla
2 cups applesauce (preferably unsweetened)
1 - 1/4 cups raisins

Preheat oven to 375 degrees. Sift together flour, soda, cinnamon and salt in large mixing bowl. Add remaining ingredients, stirring together until just mixed (don't over-mix) Spoon the batter into lightly oiled muffin tins (or line with paper baking cups) fill about 1/2 full. Bake for 15-20 minutes, or until toothpick comes out clean. Best served warm. Makes about 12

Personal Experience
I didn't have enough maple syrup or flour, so I halved the recipe. Which later turned out to be a good thing. I think the muffin tins I have are actually for cupcakes, so the recipe halved made about 18 or 19 muffins for me. I ended up using canola oil since that was all I had except for olive oil, and then I used rice milk instead of soy. I also don't have a sifter, so I just mixed together the dry ingredients with a fork and then added the rest of the ingredients. I'm not really much of a raisin fan, so I only added in about 1/4 cup of them, although I probably should have added more. Since the raisins are quite juicy and the muffin is rather dry (well, it's not dry, but you know what I mean) it was nice biting into one. They didn't really rise for me. Well, they did rise, but when they were done they didn't look like "muffins", more like blobs of goodness. Some of them were filled about 2/3 full though, so those ones looked better, but eh, it doesn't really matter that much. I was thinking I might use pieces of apples instead of raisins next time.
