This dish was inspired by the recipe for "Creamy Curried Vegetables" in the How It All Vegan! cookbook.
It's onions, carrots, garlic, sweet potato, broccoli, corn, and green peas in a sauce of soymilk, tomato paste, hot madras curry powder, and cumin, on top of white rice, with a few fresh green onions sprinkled on top. I like the colors and the fact that when you pair it with rice, it's a complete meal. I sometimes like to put margarine on pita bread, toast it, and pretend it's naan. :)
