creamy curried vegetables

This dish was inspired by the recipe for "Creamy Curried Vegetables" in the How It All Vegan! cookbook.


It's onions, carrots, garlic, sweet potato, broccoli, corn, and green peas in a sauce of soymilk, tomato paste, hot madras curry powder, and cumin, on top of white rice, with a few fresh green onions sprinkled on top. I like the colors and the fact that when you pair it with rice, it's a complete meal. I sometimes like to put margarine on pita bread, toast it, and pretend it's naan. :)

Sorry the photo is a bit fuzzy, I'm still getting used to my new camera. (the new camera also explains why there have been so many food pictures lately.)
