Broccoli and Rice Casserole

When I was growing up, I used to eat my mom's broccoli and rice casserole all the time. When I went vegan, that was one of the things I had to give up, and it was one of the things I missed most of all. I've been working on a vegan version for a while, and I think I've finally got it figured out. It still isn't an exact science, but I have a basic recipe.

You will need:

For the rice:

  • 1.5 cups of brown rice
  • 1 can of vegetable broth
  • 1/2 cup water
  • 2 Tbsp. vegan margarine
  • 1/2 tsp. ground thyme, or 1 Tbsp. fresh thyme leaves
  • 1/2 tsp. season-all (seasoning salt)
  • 1/2 tsp. garlic powder
  • 1/2 cup chopped walnuts

For the rest:

  • about two crowns of steamed, chopped broccoli (you can also use green beans)
  • 2 Tbsp. canola oil
  • 2 Tbsp. all-purpose flour
  • about 1.5 cups plain soymilk (you may need more)
  • grated vegan cheese for topping (optional)
  • margarine or vegetable oil spray
  • 7x11 casserole dish

How you do it:

Preheat oven to 350 degrees. Start cooking brown rice in medium saucepan with vegetable broth and water. To the cooking liquid, add margarine, thyme, seasoning salt, garlic powder and walnuts. Boil rice until tender and set aside. When the rice is done cooking, heat 2 Tbsp. canola oil in a large pot. Add 2 Tbsp. flour and stir, cooking until the mixture is golden brown (you are making a roux). Add the soymilk to the pan and stir. Heat the soymilk mixture on medium-high, stirring, until it comes to a boil and thickens. Add the cooked brown rice to the pot and stir to combine. Once combined, the rice should be moist and creamy, but not too dry or too watery. If the rice seems dry, simply add more soymilk. Cook the rice and soymilk mixture together for a minute or two, letting the flavors combine. Remove from heat. Spray your casserole dish with vegetable spray or lightly coat the inside the margarine and put the cooked, chopped broccoli in the pan, spreading it out in an even layer. Spread the rice mixture on top of the broccoli in an even layer and sprinkle with vegan cheese, if using. Bake in oven until the casserole is heated through and the cheese is melted, about 15-20 minutes. Enjoy!
