I had already made up a block of "Buffalo Mostarella" from The Ultimate Uncheese Cookbook--which, so far, is a great cookbook.
1 lb of pasta--I used Penne
1 bunch of broccoli cut up into bite sized pieces
1 can of diced tomatoes
1 cup of salsa - I used Herdez
1/2 block of Buffalo Mostarella
Fresh ground pepper
Cook pasta as per package directions, but 1 minute before it's done, throw the broccoli into the boiling water. Drain, rinse with cold water, and set aside. In large saucepan, warm tomatoes and salsa on medium low heat. Add chunks of cheez slowly and allow to melt in-between additions. When all cheez is melted, add cooked pasta and broccoli. Add pepper to taste and enjoy.
It was really quick and tasty--my hubby liked it so much that he ate 3 bowls! He bragged to his omnivorous friends that night about how good it was!
