Easy Burritos

Easy Burritos

12 or so vegan tortillas
1 cup of tvp
1 packet of taco seasoning
1 1/4 cups of water
1 can of refried beans
1 recipe of cheez sauce (see below)

Boil the water with the seasoning in it. Mix with tvp, cover and let sit for 15 minutes. Stir in heated up beans and cheez sauce. Spoon into tortillas, fold up burrito style and bake at 400 degrees until the shells have crunchy edges (10-15 minutes). Serve with sour supreme, salsa, and a nice side of Spanish rice for an easy (& cheap) dinner. Serves 4 with leftovers.

Cheez Sauce

(Adapted from Bryanna Clark Grogan's 20 Minutes To Dinner recipe)

1 cup of water
1/4 cup of nutritional yeast
2 T of tapioca starch
1 T of flour
1 t of vinegar
1/2 t of salt
1/4 t of garlic granules
1/4 t of turmeric (mostly for color)

And later:
1 T of canola oil
2 T of water

Mix all the first bunch of ingredients together in a blender until smooth. (This is when I love, love, love my magic bullet). Cook over medium in a saucepan until bubbly. Whisk it and cook for about 30 more seconds til it is nice and thick looking. Whisk in the 2 T of water and 1 T of oil.

(This sauce is also quite the nums served over spinach leaves on homemade pizza crust).
